Potatoes as a pizza topping? Absolutely! Paired with fennel-flavored salsiccia, this pizza hits just the right spot.

Heat a cast iron pan in the ETNA pizza oven.

Slice the potato into thin slices, drizzle with olive oil and season with salt, pepper, thyme, and rosemary.

Place the potato slices in the pan and cook on medium to high heat in the ETNA pizza oven. Flip the slices after 1-2 minutes.

Remove the pan from the pizza oven and prepare the pizza.

Spread a little olive oil on the pizza base and add fresh parmesan cheese and fior di latte. Then spread the potato slices and a few dollops of salsiccia on top (I used fennel-flavored salsiccia).

Bake in the ETNA pizza oven at 450 °C on a low flame for about 90 seconds, or until the base is to your liking.
